Exactly. Cleaning it right after you eat with warm soapy water, then drying and letting some bacon grease soak in is fine.

I like the grill grate over the full charcoal chimney method. You have to do one at a time, but it gets real hot.

I've always heard that you're supposed to have a separate cast iron for fish as well. Just heard it in a "cast iron care" segment on America's Test Kitchen too

I clean all mine with a little soap. I've got a badass arsenal of pristine cast ironery. I usually wipe down with Pam too.
