Dorignacs will get you the meats you need. No need to import from Florida. Nice job otherwise. Good call on Terranovas sausage, though.

I would put onions. If you use the right kind of tomatoes and cook your tomato paste down so it gets a bit brown and sweet, there’s no need to add sugar. I’ve heard of some old country Sicilians who will toss in a sweet potato, though.

Yep. Grate the onions and brown the tomato paste (brings out the sweetness) before adding the canned tomatoes

Onions are superfluous and add no flavor. Browning the tomato paste is a must.

I forgot to mention that this is quite a messy undertaking. Make sure you wear an apron. I wore this Santa apron. Never too early to start preparing mentally for next Christmas.
