Cut of beef. You baws familiar? Learned about it from my 1st time in AZ 25 years ago. Better than brisket ever thought about!!!

It’s got a nice beef flavor but better than brisket.....not sure about that.

Hard to find here. I like it. It's not close to brisket.
The prepacked ones from Sam's are great sous vide material.

One of our favorite cuts. I cook these using a reverse sear smoking it at 250 with mesquite or hickory until about 110. Pull it off to rest as I ramp the BGE up to sear. Then back on for a minute or so per side. My favorite seasoning for these is a fajita seasoning on the outside. Slice thin against the grain.

I love the tri-tip and usually do them Santa Maria style. Costco in Memphis has not been carrying them recently, I need to find a new place to buy it

Place I stop at in Vicksburg has been carrying these for the last few months. I've done some experimenting.
I disagree with them being better than brisket smoked. They are good, but the only thing better is they don't take as long.
Reverse seared and bloody they are fantastic.

Yep. I've read about tri-tip for years but never saw it sold around here. Then one day I stop in half gas station/ half grocery store Super Jr. in Vicksburg MS and see dozens of them. Blew my mind

We don’t really grocery shop, we just run to Super Jr when we need something. I’m in there (Oak Ridge location) 5 times a week, minimum.

It's a fantastic cut. Usually only found out west. Rouses carries it or they'll cut you one.

It's a sirloin cut. It's meant to be prepared like steak.

I use equal parts salt, pepper, garlic onion and half measure of chipotle Chile powder and oregano.
