I’ve smoked them and reversed seared them. The reverse sear was the better method by far. I’ve only gotten Tri Tips from Costco and they come in some sort of marinade. It’s not bad, but I would prefer if it was plain and I could season it myself.

Costco carries them here and they are great. Cook around 223-250 over some oak until 110. Then sear and cut against the grain.

Publix also carries here, but sometimes you have to ask.

If you ever find yourself in Santa Barbara, take a short drive north over the mountains to the cold spring tavern on the old stagecoach road. Damn good tri-tip sandwich.

i sear mine and cook over indirect heat for an hour or so.

If ever in NYC, there is a Tri-Tip Grill inside Rockefeller Center that has an amazing sandwich. It's usually one of my first stops when visiting. I believe they have a location in Grand Central as well but I've never been.
