I think Wally World has some low carb yogurts, but I like some crunch in them. I get some granola and put a little in it. I know you're anti fruit, but frozen blueberries in yogurt adds a crunch, also. They're good for you so you might want to just give it try. Maybe you could eat some fruit that way instead of just eating it by the handful.

Rutabaga - grabbed one at the farmers market the other day to try something new. Diced it up as one of the sides in a roasted chicken and it turned out to be a fairly decent potato substitute. It's lower carb, not low carb, but every little bit helps.
Cabbage is a good filler that most people often forget about and it works well cold like in a slaw or cooked down.
Squash/Zuchinni - Saw a Giada recipe for potato pancakes that was half shredded potatoes and half Squash and Zuchinni. Again this would be in the better for you rather than good for you category.
Spinach and tuna salad goes good together IMO. I know you said no canned tuna so maybe you can do it with chicken salad instead.

Power, if you're going to try and make the switch to skim, I'd recommend trying Kleinpeter's. It's the best I've had and seems to have a little more body than the others. Also, the way I did a long time ago, was to put the glass of milk in the freezer for a while until a little ice forms on the top. Makes the skim taste a bit thicker like reg milk, at least in my head, plus I like milk ice cold anyway. Reg milk tastes like cream to me, now.

I bought some of that cheap Poinsettia garbage at Rouse's last night...I'll see how it works out.
I'm going to try to eliminate actually drinking milk and just use it for things like cereal and maybe incorporate into a few recipes. Maybe I'll just limit myself to a glass a day during breakfast or something.
I'll take your advice on the Kleinpeter though as I enjoy most of their products.
I just picked up some oats, honey, and cinnamon at a health food store in metairie. I'm going to leave it at the office...I have a bad habit of not giving myself adequate time to eat before leaving for work so I'll just eat when I get here in the mornings.

I personally would advise against using skim milk. I recommend whole milk, or at least 2%. You miss nutrients that are in whole milk.
You're supposed to maintain a lifestyle of low carb, not go back to the old way of eating tons of carbs. Tons of carbs, overeating, and not enough exercise are why you get fat in the first place. Atkins isn't just a diet, it's a low-carb lifestyle.

Pickle spears help kill the appetite and are low in fat. Great snack choice.

Isn't FAT the only nutrient you miss out on in skim milk? Unless you're trying to gain weight- Skim milk isn't higher in carbs or lower in protein. Atkins doesn't mean that you have to start eating HI fat, does it?

You just can't trust the stuff that even seems healthy because you have no idea what goes into it...
I'm going to limit my eating out to 2 lunches a week and one dinner on the weekends. This week I'm cutting it out all together sans today where I had a chicken skewer app for my lunch.

Do you know what those 100-calorie "Deli Flat" buns are?
You can put some lowfat cheese and tomatoes on of those (heated up), and that's definitely decent-tasting healthy stuff.

You can definitely get whole wheat ones - they're like thinner, healthy hamburger buns, so to speak.
