Third tier plus breweries, what would you change?

Seem Louisiana is dominated with Parish a d Great Raft which is a good thing.
However, we need a few more breweries to step up. Imo Urban South and Gnarly Barley are on the cusp of pushing for that third spot. However, what of Covington, Bayou Teche, Mudbugs, etc that are established and sitting several tiers lower. Will they improve? Are they content in your opinion? What?

Covington has been open longer and Mudbugs has their niche with the King Cake Ale

Bayou Teche has a good enough following. Yes, Parish and Great Raft make better beers.
But lots of people go to the BT taproom because of the overall atmosphere of live music and someone (usually the owners or their wives) cooking up a good meal. And the beers, while not top tier trading type stuff, are mostly legit.

I will take that bet. As I have said, shitty neighborhood breweries do good because people support mediocrity if it is in the neighborhood - especially if the place has a decent atomosphere. Unless a really good brewery opens up right next door, they will continue to stay afloat.
I say that without ever having seen either of these breweries or having tried either of their beers...

Covington isn't really close to a neighborhood (I don't think so anyway) and I don't ever see anyone drinking any Covington beer, besides maybe the strawberry ale. I don't really know how they've stayed around this long unless they get a great lunch and after work crowd..

I see Tin Roof creeping into that spot before Covington, Bayou or mudbug. That New Juke Joint recipe is pretty solid.

Urban South needs a few more offerings and needs to do a good DIPA.
I am a fan their DDH stuff is really good and I think Holy Roller has developed into a top three everyday APA/IPA in the state
