The virtues of Low Carb Spicy Green Sauce

This is a condiment/dressing that we have been using more and more often, in the past few years. We have it in the fridge more often than not. It is great on tacos, used as a salad dressing, or as a dip.

It is Spicy Lime Cilantro Sauce, or Spicy Green Sauce, and a basic recipe is:

1 cup fresh cilantro
1 or 2 jalapenos (seeded or not, depending on spice level)
1 cup sour cream (I often use plain greek yogurt, as it's thicker)
Juice of 1 lime
A couple of cloves of garlic
salt and pepper

Throw it all in a blender and blend until creamy.

You can also add green onion, sriracha sauce, cayenne, dry herbs, or whatever you feel like adding. You can change the amounts, depending on your taste. It's low carb, can be made with almost all organic ingredients, and is a healthy option to store bought dressings. We even use it as a slaw dressing.

It's tangy, spicy, and creamy. It's Spicy Green Sauce.

I make the same basic recipe all the time as well. In fact, I'll snack on chips and green sauce as much or more than chips and salsa

I've made something similar as that and Costco has it in bottles, but without any heat. The stuff is life changing. First time I had something like it was at Mr. Pollo is Pensacola. The place is definitely worth the detour if your driving through on I-10.

I make something like this that may not be low carb:

Johnny's Cilantro-lime-avocado sauce

Mexican la crema 12 to 16oz jar
Juice of 4 limes
Zest of 1/2 lime
2 clove garlic, minced
1/2 bunch cilantro, sprouts and tender stem only
2 large or 3 small avocado
3 Cubanelle/ Poblano/ Anaheim or other mild larger seasonal pepper grilled and charred. Place in zip loc bag (15 minutes) and allow to soften. Removed stem portion and skin. If you care for less spice, cut and remove seeds.

Place all ingredients in a food processor except warm peppers and blend until smooth. Add warm peppers and blend until smooth.

This is great over pulled pork tacos, dipping with chips, or as a condiment on many meat sandwiches.

There are bold flavors in this, for sure, but the key, in my mind is the lime. That is what gives it the tang and balances it. You could leave jalapenos out if you don't like the heat, but I usually put the jalapenos in with no seeds, as my wife likes a little less heat than I do.

Give it a try, you might get hooked, and it's so easy to make (you know I like easy...).

Yes, I think you've got a low carb sauce there. I think an avocado has a few carbs in it, and I don't think the Mexican Crema has any carbs to speak of, so you should be good.

H-E-B (I know you're in FL) sells a spicy version, too. I think I first tasted green sauce at Chuy's. Torchy's Tacos also puts something similar on some of their tacos.

Yours looks excellently green.

I can't imagine a pantry item of this variety tasting anywhere near as good as making it fresh

Salsa verde is made with tomatillos I'm pretty sure. Good either way.

That's a bit of a different beast. They use a good bit of oil to make that green sauce, and it doesn't have any sour cream, yogurt, etc in it. But it is damn good.

No. The closest thing way to describe it that I can think of would be as a latin inspired ranch dressing. You can put it on things and you can use it as a dip. It has the same texture as ranch dressing, but the flavor profile is more latin.

BTW - sometimes I add a touch of cumin, as well.

Agreed. This can be made with ingredients you may have on hand already and, as somebody pointed out - "what do you do with the rest of a bunch of cilantro?"

My wife and I are trying to avoid store bought sauces and dressings. Too many preservatives, and other ingredients meant to increase shelf life. Those things aren't healthy for you.

So, so good! One thing I like is to throw in a mix of fresh jalapeños and some pickled jalapeños, plus some of the pickled jalapeño brine. It's almost like Chuy's green sauce.

ETA: Mixing up herbs is also fun!

I made some last night with one bunch of cilantro, and one jalapeño, not completely seeded. I was out of fresh garlic. I seasoned with salt, cumin, and medium hot chili powder. This morning, I blended an avocado into a cup of it, and that’s in the jar on the right.

I love it, but need to make something to have with it! And I’ll definitely try it with Greek yogurt for added thickness.
