Whatever I can find. Germans aren't big hot sauce consumers. I feel lucky I've found Habanero Tabasco. If I can find some pepper's I'll make my own.

The chipotle Tabasco is much better than the original Tabasco imo.

You would be amazed at the amount of food/ dishes that benefit from being "brightened up" by a little bit of vinegar. From beans to oysters to everything in between.

You by chance from Arkansas baw?

100% agree.

Their Sriracha is pretty good too for fried potatoes. (Sriracha is just spicy ketchup, imo).

Red Beans and Rice with hot sauce sucks.

Eggs with hot sauce suck

Potatoes without hot sauce suck.

I've got a bunch of hot sauces, but the one I use the most is Crystal

I also love the original Sriracha but haven't seen it in the store for quite some time

What? The main ingredient in ketchup is tomatoes. There are zero tomatoes in Sriracha.

Not sure why Tabasco gets hate. I love it. The only thing to hate it the premium you are expected to pay for it. I'll happily use Crystal instead, which is half the price where I live.

My go to sauces are:

Tabasco / Crystal - Most versatile and can be used on many things, not just cajun food.
Huey Fung Sriracha - Used with Asian, Indian, and Middle Eastern dishes
Cholula - Mostly used with Mexican dishes, but good on several things that Tabasco is also good on.

Then there's Chili Garlic Sauce.

I use this in addition to Sriracha on the same dishes often. It's hotter, more vinegary / tangy. Love it.

The sweetest of sriracha puts it more in the ketchup world than the tomatoes imo

Crystal was my preferred choice but since I've been making my own for several years now and using many of the super-hot type peppers, I prefer mine and so do many of the people I share bottles with.

But if in a restaurant with Tabasco and Crystal on the table, I'm going with Crystal every time.

Melinda's has a lot of different flavors. I really like the Ghost Pepper one. The Scorpion is good too, but very, very hot.
