In a restaurant like that growing up in the 80’s and 90’s in SE Louisiana it was Tabasco and Louisiana, some would have those clear bottles with peppers stuffed in for that pepper juice. That pepper juice went great on a plate of red beans, greens, and cornbread. I was eating Soul Food with my Dad before I knew what Soul Food was. My favorite Soul Food place was Ms. Sylvias in Franklinton.

Tabasco makes everything it touches taste like Tabasco. I don't mind it in the smallest of doses. It's just too easy to pour too much and completely lose the flavor of what you're eating.

I use the Tabasco in ketchup.

Crystal for most things.

And this for when I want HOT



If you aren't acclimated it is going to be a bad time.

I like trying other sauces, but have not found anything else I use consistently.

ETA: I like sauces that are built around flavor rather than heat. If the primary selling point is how hot it is, I’ll usually pass even though I have a very high tolerance for heat.
