The potato salad belt

What are the boundaries of the potato salad in gumbo belt?

Our family in Abbeville always puts potato salad in their gumbo and it is divine.

I know they do it down in Bayou Lafourche too.

Is there a potato salad belt?

Well, I'm in N.O. and if I have potato salad on hand when I make gumbo, it is going in the bowl after the rice and gumbo are in it.

South of Abbeville here and the potato salad is always going in the gumbo. One side of the family always has baked sweet potatoes available also.

Raised in western Vermilion parish. Mom's family always put potato salad and baked sweet potato in gumbo. Dad's side always had potato salad and baked sweet potatoes on the side, not in the gumbo. Go figure. Damn good either way. The quality of the gumbo was always excellent at either place.

I’m a mississippi guy, and I like a mustard based simple potato salad. That’s what my mom always made, and still does. But when I’m doing bbq, I tend to lean more towards a “loaded baked potato” potato salad, with bacon, sour cream, mayo, etc. Can someone give me a recipe for a “gumbo potato salad”?

If you want sensory overload, put a few ladles of gumbo over jambalaya for Cajun Nirvana.

My parents worked for a while in Abbeville and Ville Platte when young, and they brought the potato salad habit with them when they moved to northwest Louisiana.

We grew up eating potato salad in gumbo, but it wasn't until the internet came along that I found others who did the same.

I’m in Denver now, my daughter gave me looks of disgust when she saw the potato salad in my bowl!

Sweet potato in a gumbo is a nice treat. It’s something different than a standard potato salad

I think you lost the crowd when you hit the loaded baked potato potato salad.

So I’ll give you a hot tip. Use the loaded baked potato potato salad for your gumbo. It’ll work.

Mustard and relish type is the usual but I don’t think any kind would be bad. And it’s excellent in gumbo

Peel, cut up and boil potatoes
Boil what seems to be an appropriate number of eggs for the quantity of potatoes

Mix together with enough Mayo to coat but not smother the potatoes and eggs, a little mustard, and S&P to taste. I like to mash a little, but also have some chunks of potato still there as well.
