Okay everybody, the next ingredient is bacon, which is surely a popular food. Can’t wait to see what sizzling bacon dishes y’all come up with! See y’all on Tuesday, August 17.

Yes. Bacon is cured and smoked. Again, it can be labeled “uncured” or “no nitrates added”, but that simply means they use other ingredients such as celery powder to cause a natural reaction in the meat which produces nitrites without adding nitrites.
Take a pig’s back leg (the meat) and cook it. It’s white and it’s a pork roast.
Take the same leg and cure it, then cook it, and it’s purple and it’s a ham.
That’s the difference between bacon and pork belly. They are not the same.

Do you cold smoke or hot smoke? I hot smoke most of the time, but during the winter I cold smoke when I can because I find the texture better.
