I could be off, but I'm thinking it is going to be more like Cochon/Peche/Luke/Beausoleil/Table/etc. in the sense that it will be trendy and redone really nicely, so BR will treat it as upscale, but it isn't actually white tablecloth upscale. I'll be surprised if it is planned to be as formal as Mansur's or something.

That's kinda what the Merchant is.
I am going to try to be positive about it but I am still butthurt Chelsea's is gone.

Every bartender I knew at ZeeZees works at other bars restaurants in BR as well. I'd have to guess they didn't have the desire nor the time to be employed at The Merchant.

I went to the Bulldog recently and recognized no one... was odd because there was always at least 1 person I knew

That is odd. I was there a couple of Thursdays ago for trivia and there were a few of the regulars working there.

Yeah, same people for the most part are still there. They've lost ~4 or so people over the past couple years, but long time barbacks and door guys moved up into their place, so the bar staff should still be pretty familiar.

It's the responsibility of the new owners to keep the holdovers from the old bar in your mind? How do you even know the old bartenders would want to work for the new management in a more restaurant style setting?

I've been twice. Sat outside once and sat inside once. I'm excited about the prospects but my biggest complaint was the noise level inside. We went on a Saturday at 7 and got a table right in the center of the restaurant. We ended up leaving without ordering because it felt like we were surrounded by shouting matches. I get this is a pretty busy time but it felt like the noise level of a bar at 10pm. I'll still got back and am not really blaming the merchant, maybe it was just a random occurrence of lots of loud drunk people at one time.

How's the food there? The wife and I like to go eat out every weekend if we can get a babysitter. However, we typically end up at either beausoleil or sushi Yama because everything else is sort of played out (excluding roberto's).
I hope this place turns out good. Would like to have another place to throw in the rotation. Just hope the food is better than table kitchen and bar. Went there once and never been back.

This. Chelsea's was a place my broke friends could afford to go eat at and catch a show. There are already several "upscale" restaurants in the area with Juban's, Galitoires, ect.
Chelsea's was successful because they had the best tasting food for the best price in the area AND had outstanding live bands. They successfully were able to have a great menu and still be cheap enough that College students didn't feel like they were impoverishing themselves by eating there every now and then.
I don't see the new concept being successful long term.
