I hang a basket over the side full of fettucine noodles and let them cook in the boil. Afterwards I squirt a little lemon on them and top with sliced green onions. Talk about good.

Probably more leftover crawfish than you want to end up with.

I'm not an olive fan so I don't see this one happening but a guest once requested ahead of time if I did sweet potatoes in the boil. I told her I didn't so she asked if she brought a couple of small ones would I drop them in for her. Sure thing.

She got me to try one and it was pretty damn good. I still don't do them but am definitely not opposed to them in a boil.

I’m intrigued. Tell me more. What kind of olives? Just regular pimento stuffed olives from a jar or some kind of nice Whole Foods olive or something? How long do you soak?

I like to punch holes in a can of corn. I don’t like eating it off the cob and this gets all the same season and flavor but I can eat it by the spoonful.

One I didn't see mentioned is eggs. Get the water moving but not boiling with the basket in the pot. Crack a egg and gently roll it into the water and it will get a skin and hold together before it hits the bottom. It will pick up some seasoning bits and a claw or two on the other skin along the way. Pull out the basket and grab em, eat with dip. Or save and use to make potato salad with the leftover potato's garlic n onion.

I also tried some small pickles the last 2 boils this year as a request. First time i put at the end of the soak but it wasn't long enough. Last time was at the beginning better but next time I might try at the end of the boiling of potato's before I drop the crawfish. I do not bring back to a boil once I drop the crawfish.

At least once a year I'll boil a sack for the 4 of us and another sack for picking. I'll clean the heads to use for making crawfish bisque and vacuum seal all the tail meat and fat from the crawfish.

The tail meat gets used for bisque, crawfish pies, seafood gumbo or some crawfish fettuccini. By seasons end I usually wind up with at least 5-6 lbs. of tail meat for the freezer.

You can also get a flat and wide colander and put it on top of the crawfish while they are soaking. Crack your eggs into the water where the colander is right after you cut the fire.

One of my favorite dishes to fix with a lot of the leftover boil stuff is "After The Boil Soup" that uses the corn, potatoes, sausage, mushrooms, garlic, tail meat and I like to use fresh onions and celery when making it instead of the mushy crap from the boil.

If you've never heard of this dish, look up "Cajun Ninja's After The Boil soup" video on u-tube. It is killer and I've fed several people this dish and it's a huge hit.
