Texas Star Beef - Rouses

Rouses carries a brand of beef that goes by Texas Star Beef. It is always priced great and the cuts look great as well. I believe that most of it is Choice, maybe some Prime.
I talked with a butcher that claimed to have worked for Rouses before in the past. He dogged Texas Star Beef very bad claiming in was all raised in Mexico, half came in frozen, other half thawed, injected with preservatives, etc. Now, I do want to say that he was fired from there and obviously salty, but now to my question:
What does this board think about Texas Star Beef? My local butcher that I bought all my meat at is closed due to medical problems and I need a new source until I find another butcher.

I've never bought it. I've heard it's terrible, though.

No where does it say that their cattle are raised in Texas. It doesn't even say that they use Texas cattle feeders, only that they have relationships with them.

I'm pretty sure I've seen in the Rouses sales ad that at least some cuts of Texas Star Beef are USDA Select, not Choice.

It very well may be. I have never bought it before and am hankering for a decent steak tonight. I need to find a new butcher around the Denham area.

Grab a ribeye from behind the glass. They aren't Texas Star.

I've bought it before when it was on sale. It's very hot or miss on quality. Some hugs the border of select/choice. Some are fantastic others should be ground meat

I bought 2 strips from Wal-Mart Friday night and cooked them on my Weber kettle. They were excellent. I've also bought the Texas Star from Rouses in the past and they were decent too. I think it's all in how you prepare it.

Ive been getting the ribeyes behind the glass for a few weeks now. Great cuts and love them, but need to find something a bit cheaper for the longterm.

Wait for a sale at Albertsons and load up. It's choice and if you ask the butchers he'll cut an entire rack so you can pick what ya want if you are buying 6/7 lbs+

Stellar advice. Not the mom and pop store that I prefer, but a great second option.

Carter's is your best bet in Denham. The chairman reserve ribeyes are pretty good when they have them

I bought 6 packs of bad chicken from them a few months back. They apparently let an entire shipment get hot before putting it up and it all spoiled. They didnt pull the chicken after I told them twice (head butcher and manager). I still shop there all the time, but I no longer buy any meat from them.

The butcher at the Rouses by me said its between select and choice and that "it's a'ight". I agree with his assessment from my experience cooking it.

It's definitely select. They carry choice and prime too, but it's always just got the Rouse's label.

I've bought their Texas Star Beef before and it wasn't bad for the price if you know how to pick out a decent cut of meat. What I do is look for good mable. If it's real lean on say a ribeye I just go for their prime behind the counter and their dry aged beef that I've bought was excellent. I think it's a cross between lower end choice and higher end select sold under a proprietorial grade and just calling it Texas Star Beef. Hell Black Angus is sold the same way in some supermarkets. Some folks can't afford top shelf beef so it serves a purpose amongst some of their shoppers.

I've had some success with Texas Star, but I've always made sure I picked out one that I really like the look of. If I cant find one I like, then I get one from behind the glass.

The steaks look beautiful but are always super tough, no matter how perfectly cooked they are. I'll never buy them after eating delicious looking steaks at my Dad's home and being tricked every time. He won't buy them either.
