Teet’s Tasso.

I ordered some meat from Teet’s and it was delivered today. I ordered sausage, tasso, boudin, and HHC. I plan on making a gumbo tomorrow, and it will be chicken, sausage, and tasso. I’ve never cooked with tasso before, so my question is do I use equal amounts of tasso and sausage. Educate a Mississippian, please.

That tasso is delicious.

I agree with above poster who said to save it for beans rather than gumbo. I tend to agree, though my dad always used a little tasso in his C&S gumbos.

I like to use it in shrimp & grits and blackened alfredo dishes, whether chicken or shrimp/crawfish.

Thank y’all for the recommendations. I’ll save it for white beans and such. From what I’ve read about it, it certainly sounds like it would be good in shrimp and grits, too.

While I’m here, I want to eat some of the boudin tonight. Best method to reheat? I had planned on grilling or smoking on a relatively low temp...

You could put a tad bit of water in a rice cooker, steam it in that for a bit, then oven to crisp up the casing.

Tasso would probably fall apart quickly in a gumbo. Definitely better in beans.

I like tasso in some black eyed peas or something like that which would usually be seasoned with ham or bacon.

Their tasso roast is great, highly recommend trying that at some point in the future

Thanks for all the recs, everyone. Will definitely save it for something down the road. Tried the sausage and boudin. I thought the sausage was great, really smokey, and the boudin, while it was a little spicier than I expected, was the best I’ve had. Delicious.

Teets smoked sausage will go well in any Cajun dish.

Tasso is good in shrimp and grits or in a shrimp and tasso pasta dish.

Tasso shouldn’t fall apart. Tasso is Tasso ham. It’s ham meat, whole-muscle cut, seasoned, cured and smoked. Ham meat is lean and shouldn’t fall apart in a gumbo. Tasso is used to add seasoning and smoke flavor to a dish. It’s generally used sparingly vs smoked sausage. How much you use is up to your taste.

Add a smoked ponce or two to your next Teet’s order. Served with brown gravy and rice, it’s a damn tough meal to beat!
