I have some tasso I'm itching to use. I was thinking of throwing a little bit into a jambalaya for the game next week.
I'm just talking about a little just to get a little bit of that tasso flavor.

Sure. If you like the seasoning taste that’s on the Tasso, go for it.

Absolutely. Just make sure it isn't the Paul Prudhomme (love ya Paul) shite tasso.

Thanks guys. This is tasso from Best Stop. I haven't had their tasso before but I'm sure it is good.

Did you really think that a "little bit" of tasso would adversely affect a jambalaya?

No, but some people may not like a strong tasso flavor. I really don't even know what a little bit would amount too.
Any suggestions on amount of tasso for 2 gal pot? 1/4-1/2 lb.
Hard to screw it up I guess

Tasso should equal the amount of smoked sausage

Absolutely, yes. If you’re talking about a stovetop pot, and you add a pack of Tasso, yes, it will add flavor and possibly overpower depending on your desired flavor profile. It depends what “little bit” means. I mean, the point of Tasso is to add flavor.

I'm sure it is too. I like to taste a piece before adding it into any dish because some tasso has cayenne and it can make your dish overly spicy. Just adjust your seasoning accordingly.

if it's a cajun meat, it can go into a jambalaya

Are you really doubting whether you can use a pork product in jambalaya? You can use almost any meat and it would be fine. You are aren’t even deviating to where it would make a meaningful difference.

Throw 1/2 pound in there and don't worry about a thing. Tasso will only make it even better.

What meats are you putting in the mix and how much?

Or, use 4 meats and put equal parts as follows:

Chicken thighs
Pork Shoulder
Smoked pork sausage
Tasso

DubaiTiger,
I typically just do chicken and sausage. I always throw more sausage in than chicken.
I might do some pork this time with the tasso, chkn, and sausage.

It is really good tasso. Carter's supermarket in Walker carries the best stop brand tasso. It is really nice in a pot of red beans.

they also carry temple meat, which is the best pork for your jambalaya IMO
