SUBMISSION Thread for the Watermelon Challenge 6/28/22

This is the thread for submitting your watermelon entries.
Submissions will be accepted from 9:00 am today until 8:55 am tomorrow morning. There is still time to create!
Your submission must include AT LEAST one picture and a description of the entry. You can submit a detailed recipe, but that is not a requirement. The picture must be of your creation, not a pic you stole from the interwebs.

Watermelon Cake
Didn’t end up using the almonds. Did decide to add vanilla to the whipped cream.
Note: Watermelons are watery, once cut. After you get it to the desired shape, use paper towels to soak up moisture on the outside of the melon and on the plate. After slicing, use paper towels again, on the inside of the cut melon, and on the plate.
Note 2: After letting the frosted cake set in the fridge, I decided I needed to neaten up the frosting, but the whipped cream doesn’t smooth easily once set, and I didn’t have enough homemade to just add another layer, so I mixed my homemade whipped cream with some Cool Whip so I could re-frost the whole cake. If you look carefully, you can see the color difference between them on the cut cake.
Note 3: I had some for breakfast and don’t feel guilty about cake for breakfast!

HONEY-MOLASSES GLAZED SMOKED WATERMELON "HAM"
Seedless watermelon, rind removed, then brined for 4 days using the ingredients in the picture.
Smoked for a few hours, then scored and glaze applied, continued smoking with glaze.
Removed from smoker and sliced.

Spicy watermelon rind Indian curry
tarbooz ke chilke ki sabji (pronounced: tar-booze kay chill-kay)
The first time I’ve made this and was blown away with the flavors, the rind is really crisp, similar to a cucumber and holds up to the heat of cooking perfectly. Just the right amount of sweet and heat in this dish
Will definitely be made again in the No8 household!
What I started with

After a few minutes, I picked the Barramund up, laid another layer of sweet potato down and flipped the barramundi onto it. The fish was relatively thin, so I did not have to finish it in the oven.
The fish turned out outstanding. The sweet potatoes crust gave it a nice sweet crispness and the cilantro lime dressing gave it some punch.
For the salad, I used some mixed greens, sliced red onion, cucumber, and cubes of watermelon.
The salad dressing was a combination of cilantro, honey, fresh lime juice, salt, and mayo. It was outstanding.
The Mojito was 1 part simple syrup, 1 part lime juice and 5-6 mint leaves muddled. Top with 3 parts rum, 3 parts watermelon juice, crushed ice, and top off with watermelon-lime AHA seltzer water. This is a great summer drink for south Florida. The watermelon and watermelon-lime seltzer make it very refreshing.

We love Spicy watermelon rind Indian curry tarbooz ke chilke ki sabji at our house. I try to make it at least once a week. I'm not seeing any black pepper in your ingredients. Other than that it looks like a pretty solid first effort. Nice job.

Watermelon Poke
I didn’t think I would participate, but this weekend I was cutting up some tuna for quick searing. It was a nice piece, safe to eat raw, so I cubed some of it to snack on while getting everything ready. I noticed the cubes looked like watermelon, and it got me to thinking.
My best laid plan was to use both watermelon and tuna. I figured the contrast of crunchy WM and tender tuna would be nice, but alas my fish monger let me down on the way home.

So I decided to go watermelon solo. I’m glad I did.
Like any poke, it was simple to put together.
Cube the watermelon, and marinate in mixture of soy sauce, sesame oil, rice vinegar, white pepper, red paper flakes and fine diced onions from the white end of the green onions. I only let it marinate for 15 or 20 minutes.
I thought it was shaping up okay, but I was still bummed about not having tuna. I wanted it to taste like the sea, like a good tuna poke bowl.
Then it hit me that I had some bottarga in the fridge - dried and cured fish roe, a miracle pantry ingredient to have on hand.
I grated some in the marinade and added some fresh grated to the final dish. It changed the flavor from “this is okay but I wouldn’t do it again” to “hmmm, this is interesting.”
Topped the rice with the watermelon, sesame seed, seaweed bits, bottarga and green onion.
I started out thinking watermelon was a way to add some zing to tuna poke, but I realized it can stand on its own just fine.
In the words of Cousin Eddie from National Lampoon’s Vacation, “l don't know why they call this stuff hamburger helper. It does just fine by itself.”
