Don't worry about Natchitoches.Other than Laysonnes,every resturant and grocer sells the frozen commercial meat pies from the factory in Coushatta. Used to be you could find them and tamales made by many home kitchens in and around town. I have yet to find any of those still operating. If anyone has a source like that please let us all know.

Stop by Billy's in Krotz Springs for a Pepper Jack Boudin wrap and Mama's Fried Chicken in Opelousas on St. Landry St. Mama's is the crispiest, crunchiest fried chicken ever served in a paper bag.
How did you cook it?

Anybody ever been to Uncle Albert’s fried chicken in Boyce? A guy I work with told me it’s among the best he’s ever had.

I've had it about 3 or so times due to many recommendations such as the one you received. It's delicious and ranks high on my list of best fried chicken. I also like the rice and the potato salad.
The first few times, I had to wait for them to make it. I don't know if that was because I ordered the spicy or if they routinely make to order. They told me to call ahead and order if I wanted to, so I did that and everything was freshly fried and ready to go. I think I called about 20 minutes ahead. I didn't mind the wait, though.
Be prepared for this place. It looks very run down in the middle of a run down looking little town. It doesn't look particularly clean, but the chicken is darn good.

This isn't from user error. The last sausage I bought from Teet's was the same. The casing was tough and chewy and it was dried out. Something changed when they moved to their new location.

IDK..I went to the old location and asked for a ponce and they showed me two that looked like big maroon raisins. imho they over-smoke. But.. they way I cook the sausage, I put it in a pan with water half way up the side of the sausage and put it on a low boil, flip it once and when the water's cooked down, it's done (about 40 minutes). If you put it on the grill, it's dried to the point of being inedible.. As for the sausage cooked in a pan like I described or thrown in a pot of gumbo, I've never been disappointed. Teet's boudin though, is godawful.
The smoked pork sausages I like best are at the Mowata Store and Coleman's in Iota.

It’s not a sandwich, there are plenty of other delicious options if you may not like the pounded flat shrimp but I don’t see how you can not like that

I believe Lasyone's closes at 3 pm, so you may want to double check if you're going through there later than that.

I made in time, and then I went to Grayson’s in Clarence. The smells emanating from there were heavenly. Almost to Shreveport now. My ice chest is packed. Gonna grab a shrimp buster and some onion rings and marinated crab claws
