Cooking white beans & rice for the first time this week (large limas). My wife always cooks the red beans, and neither of us has ever done white beans. I grabbed a smoked ham shank at the store, then when I noticed they had pickled pork, I grabbed a package of that as well. Is it okay to do both, or will it be conflicting flavors? Should I choose one or the other and couple it with smoked sausage or something else? What is your go-to addition to white beans?

I've used both together, but mainly in red beans. I don't think there's a conflict.

First off Limas aint white beans. Second, either one will be fine. My FIL put my on pickled pork in white beans. I like it. I've cooked several 50 pound batches of white beans for various benefits and no complaints with pickled pork.

My bad. Butter beans. I called them white because they were white. Didn't mean to be racist.

Once you add meat they aren't beans anymore.

White beans I like to put a stalk of Rosemary in cheesecloth in them.

Limas I like to put shrimp in.

I've never had pickled pork (that I know of). I might have to try it.

I buy a whole smoked ham (~10 lbs)and get the butcher to cut it in 5/8" slices. I freeze the slices in 1 lb bags and use in most all our beans. We shred it and add bones and all. You can get it around $1.25 / lb. Also add smoked sausage or tasso sometimes.

Just bought some great looking smoked ham hocks at Rouse's and used in some red beans last week. Very meaty.

I'm a big fan of pickled pork. When I cook beans, my go-to is ham hocks or a leftover ham bone with sausage/pickled pork/leftover ham. I think that's a good combo - you get the depth of flavor from cooking beans with a bone for hours and you have some nice chunks of boneless meat.
I made some white beans yesterday with ham hocks and smoked sausage I bought at the farmer's market. I also added a splash of vinegar to the pot, per someone's recommendation on here. They turned out real good.

I am doing white beans on Sunday and will use the rest of a smoked butt I threw in the freezer a couple weeks ago.
