Smoked chicken - spatchcook or beer can

Going to smoke a chicken tomorrow. Got it in a wet brine. I’ve always just smoked trussed chicken. Thoughts on spatchcook versus beer can?

I always spatchcock chickens, whether roasted or smoked.

Beer can chicken is vastly overrated and actually one of the worse ways you can cook a chicken.
If you’re gonna do it though, make sure the beer is all the way down to room temperature. A cold beer will keep the inside from cooking evenly with the rest of the bird.

Put it on the beer can rack with no can. Vertical roasting.

Rick, next time consider wet brining for 24 hours, then allow the chicken to open air dry on a rack in the fridge for 24 hours.. 48 hours if you can. Just split the chicken completely in half and smoke the halves

Or even better and easier, dry brine for 48 hours.
Spatchcock, Dry Brine, then Smoke. It comes out incredibly nice.

I’ll do that next time. Wet brine will be right at 16 hours when I take it out to get ready to smoke.

Dry brining gives you a much better skin than a wet brine and still breaks down the surface proteins for good moisture retention. And its much easier to do.

I usually take empty can and put some lemon juice or something close in there with a little water. Don’t see the point in wasting a beer on it.
