Shrimp Tacos with Chipotle Adobo Sauce (photos)

Shrimp Tacos
We keep IQF shrimp in the freezer to use for day to day cooking.
Today, that was shrimp tacos. We intended to make 4 tacos, so we took out 16 (large – maybe 14 count) shrimp to use. They thaw easily under cool water.
Peeled
And seasoned with maybe two teaspoons of Lawry’s Garlic Salt and 2 teaspoons of Slap Ya Momma.
Then set aside for an hour or so to let the spices do their stuff.
The wife made slaw by thin slicing cabbage and adding 1 Tablespoon mayonnaise, 1 Tablespoon lime juice, 1 Tablespoon olive oil, dash of salt and 1/4 teaspoon dried cilantro. The slaw was set aside for an hour before use.
And sliced some radishes
The wife made chipotle adobo sauce with 1 Tablespoon mayonnaise, 2 Tablespoons sour cream, 2 teaspoons (to taste) chipotle adobo peppers, 1 teaspoon lime juice and 1/2 teaspoon sugar.
The shrimp were quickly cooked in a Tablespoon of oil.
Flour tortillas were quickly heated
And the tacos assembled
Good lunch

MD you having marital issues? You mentioned "the wife" multiple times in this post, but didn't see any "MHNBFP". Thoughts & prayers with you in these difficult times
ETA: MD I hope you realize this post was made purely in jest. I really enjoy your posting & story telling. Was just disappointed when we didn't get your patented "MHNBFP"

Nah, we're slick. Today is Momma's day and the boys had a statue erected in her honor at the National Momma's Hall of Fame Museum in Philadelphia. I hated to detract from that joyous occasion, so I played this post on the low side.
The wife (MHNBPF) is a real trooper, and has no problems with me or our relationship, well at least with our relationship.

Marcus - no it was fine. However, I would taste it after maybe half of the recommended addition and then adjust the level to suit yourself.
One more thing - The stuff would be great on a bacon cheeseburger.

I used to use adobo sauce to make my chipotle mayo but now just use chipotle powder. Its much easier, less expensive and taste the same.

I'll look into the powder. Could be better/easier if the taste is same.
I should have said - We keep our adobo sauce (the jar shown in the photos) in the freezer and partially thaw it out each time we need it (just enough thawing to scoop out what we need for that one use). Freezing and partially thawing works fine, just takes a few minutes longer than powder would. I honestly have no idea how much a jar of adobo chipotle sauce costs, but it couldn't have been all that much. I'm sure if you used a lot of chipotle, powder would be nice/easier.

I like pickled red onion slithers. They would be nice on these tacos. Usually takes about 30 minutes to pickle the red onion slithers, and they are pretty when pickled.

Ironically, I just bought a jar of that Adobo sauce and it was $1.78 at Walmart.

$1.78 sounds right. Hard to believe powdered chipotle would be cheaper, since most dried spices are in the $3.00 - $5.00 range. Since I would keep powder in the spice cabinet and keep my adobo sauce in the freezer, it might be easier, but I am never in so much of a hurry that I don't have 5 minutes to partially thaw the frozen sauce.

Looks great MD. I always have that same jar of chipotle peppers in my fridge. Is that the original lid? It's usually smaller and red.
If you have a gas grill (or for those that have gas stove), try heating your tortillas over an open flame for a few seconds on each side. It gives it a slight char and really makes it "pop" when eating tacos.
