Share some homemade sandwich recipes

I'm a big sandwich person, would love to get some more tried and true ideas to add to my arsenal. Don't be afraid to get weird with it!

A couple I've been making lately:
-Spicy sriracha chicken salad sandwich
-Traditional club sandwiches
-Turkey, homemade spicy pickled onions, tomato, arugula, and avocado sandwich.

And no, hot dogs are not sandwiches.

Made a sandwich with taco meat, melted cheese and some peppers on poboy bread the other day. Would eat again.

It is fantastic. I'm sure it would be perfectly fine without buttering the bread as well.

Crock pot a chuck roast stuffed with garlic. put him to side after cooking and shred him up. Take drippings and make a thin gravy in a pot. After it thickens up add shredded meat back in and you have a debris, roast beef, or whatever you want to call it sandwich. Make sure you throw a slice of provolone on top and stick it in a toaster oven to crisp bread and melt cheese.

--grilled cheese: gruyere and caramelized onions
--really good country sourdough or similar rustic/lean loaf bread, sliced: aged English cheddar, whole grain mustard, chutney, and thinly sliced green apples
--roasted red peppers, sliced fresh mozz, and pesto on ciabatta
--egg salad on seedy whole grain toast
--a california club: turkey, avo, sliced monterey jack, bacon, sprouts, etc on a good quality white bread

Best thing you can do as a sandwich lover is to upgrade your bread. Find some non-industrial loaves, slice, and freeze what you aren't going to eat immediately. That way, you have a library of frozen sliced quality bread for your sandwich habit.

We like doing a ground chicken burger with a soy sauce marinade. Then grill up some sliced pineapple to go on top.

Super easy and good flavors.

It's a pretty basic recipe that I doctored up a bit.

These are just rough approximations, I usually season it by eye:
2 cups cooked chicken chopped
1/2 cup mayonnaise
1/4 tsp garlic powder
1/2 tsp celery salt (I don't like raw celery)
1 tbsp jalapeno relish (i like wickles)
1 tsp mustard (I use deli mustard)
~1 tbsp of sriracha or to taste
salt and pepper to taste

Couple of leftovers sandwiches

Cajun Torta

Cook your leftover BBQ beans in bacon fat like refried beans, use that as the bottom layer on the torta bread. Pile on pork steaks or pork chops, make a slaw with Pico de Gallo added to put on top.

Meatball Stew sandwich

Toast some bread put creole mustard on both slices, cut meatballs in half place on bread with some onions and peppers from the stew, top with thin sliced cantaloupe.

I have an incredible recipe but it's on a roll style bread so it doesn't classify as a sandwich apparently.
