Don’t forget that the egg challenge is next Tuesday, a week from today.

Have you decided on your egg dish? I’m torn between several ideas.

UPDATE: Challenge starts tomorrow by 9:00 am and doesn’t end until right before voting on Wednesday at 9:00 am.

I'll probably experiment and make my dish this weekend since it's something I've never cooked before.

Pete, if you make it before you go out of town, I can post for you, if you’d like.

Got Blaze, same. I haven’t made any of the things I’m considering. One would be just for fun, with no expectations of getting any votes. Not sure it’s egg-centric enough, though.

Will be on vacation. I would have entered and done my scotch egg using elk sausage! Someone should try it. Very challenging!

I’ve got something in the works as long as I receive it soon enough, it’s simple yet way over the top. Let’s just say it involves a big arse bird that can’t fly, if I can’t make the time cut it’ll definitely deserve a thread of its own which I will do

Props to you for acquiring or even attempting to acquire. I looked online for some big bird eggs, but am going with plain old chicken eggs.

With a ingredient so simple I’m thinking let’s just hope I receive it soon enough

I wasn’t going to participate because I just got back into town and leave again Wednesday .. but changed my mind. I’m not making something I thought up alone but something several Michelin chefs have supposedly worked to replicate.

I’ll probably screw it up to all hell but stay tuned.

Hmmm... Îles flottantes or Arzak egg, perhaps?

No, I know GE&H...

This is neither here nor there but apparently eggs are popular in Indian street food in Mumbai. One of these places opened not far from me a couple years ago. I’ve been eating at Indian restaurants since the 80’s but never heard of this before. They don’t have a tandoor and I’ve only tried part of their menu. Some of it is so rich and eggy that I can’t finish a single order in one sitting. But it’s interesting and worth mentioning in case you’re unfamiliar. What’s really weird is that they don’t open until 11 AM. You’d think they’d be open for breakfast.
