Anyone got some recipe's or tips? Didnt find one in the TD recipe book.

What should I top with?

Butter and any seasoning you like and a little lemon.

Old Bay, Tony's are both great.

We rubbed one down with Sriracha and cracked a little salt on it. It was amazing

2 sticks real butter
3 cloves minced fresh garlic
2 T Tony's
1 T black pepper
1/3 cup lemon juice, fresh is best

Melt the butter and blend in the remaining ingredients. Adjust seasoning to your taste.

Baste the fish while grilling..

This is my go-to for grilling fish like tuna, redfish, drum etc.

Melt real butter, add some finely minced garlic, chopped green onion tops, parsley, lemon juice, a dash or two or Worcestershire sauce and let this all meld together in a pot until the flavors are well blended.

Grill and brush this sauce over the fish as it cooks.

But get the RED Tony's "More Spice". It is 25% salt and 75% spice. The GREEN original is 50/50. Too much salt.

Tony's with chopped onions and lemons on top. Drizzle wishbone Italian dressing as it cooks.

All above are good. For something a bit different take a plain bbq sauce that is kind of thin and brush on just at the end and let set.

Or make a nice pico-de-gallo and spoon over before serving.

Best thing I can say is cook medium or medium low and kind of slow and do not overcook.

Hmmm the pico de gallo sounds damn good
And yes slow and low for heat
I like to add fresh cut lemons and onions while grilling also

Keep it simple.

I make a little marinade with Olive Oil, white wine, lemon juice and butter, brush that on while its cooking. Season with your favorite seasoning.

I made a mango salsa and put it on top of some grilled redfish last week and it was great.
