Got some red potatoes in the pantry I need to use for something. Grilling burgers tomorrow night and thinking a red potato salad would be a good side. Any good recipes that F&D would suggest?

I don't have a recipe. I just make it to the texture and taste I like.
I boil and I prefer to peel, but lots of folks like to leave the skin on. I like to put them over sliced green onions while they're warm and mash them up a bit. I don't care for chunky too much, so I do mash them well, being careful not to over mash or mix so they don't become gluey. I like chopped celery, sweet and dill relish, mayo and yellow mustard. Sometimes, I add hard boiled eggs. Season with salt and pepper as I go along and taste.
It's really a dish you can do to your own taste and texture.

Simple recipe I got from Cajun Aces on Food Network that I love:
Dice and boil potatoes until tender
Boil 4 eggs, peel, and chop
In a bowl, combine the following:
3 tbsp sweet relish
1.5 tbsp creole mustard
1.5 tbsp yellow mustard
3/4 cup mayo
4 boiled eggs, chopped
Add the boiled potatoes to the mixture and combine; season with salt and pepper. Top with parsley and paprika.
Simple and delicious.
Doctor it up with celery and bacon if you want more texture.

Don't forget the garlic, roasted or raw. Put the dressing on warm potatos

Good idea. Going to toast some and add it next time

Boil and peel four eggs. In a large bowl, mash with a fork. Add 2-3 heaping tbsp. mayonnaise, 1 tbsp. sweet cubes or sweet relish, salt and pepper.
Boil and peel 1 lb of red potatoes, mash with a fork.
Add the boiled, mashed potatoes to the egg mixture, and mix well.

Yeah that looks nothing like a traditional potato salad.

Here's my go-to recipe:
Peel and cut potatoes in like size pieces.
Get a pot of water on the stove to boil and add some seafood boil seasoning-----adjust to your taste. Naturally the more you add, the saltier and hotter they will be. Put as many eggs to boil as you think you will use while the water is cold. Once boiling, add the potatoes and boil until they are fork tender, drain and set aside.
While the potatoes are boiling, mince some onion, celery, green onion and a bit of fresh parsley and toss in a bowl. Then add a bit of sweet relish and some chopped up salad olives to the bowl. I use my own homemade bread and butter pickles instead of relish.
Add mayo and a few squirts of yellow mustard to the bowl and mix all that well.
I use a potato masher and mash the potatoes until they are broken up with a mix of fairly smooth and small chunks. Add the bowl of seasonings of onion, celery, etc. to the potatoes and mix well. Cut up the eggs and add them last and mix them in well.
This is what I call my Cajun Potato Salad and I've not had anyone not like it that's eaten it.

I make a German Potato Salad inspired by a buddy's dad who shockingly enough is from Germany. It goes something like this:
2-3 pounds 'B' Red Potatoes - whole
1 Red Onion - diced
1/2 lb Bacon - diced
1/2 cup Mayo
1/2 cup Sour Cream
2-3 TBS Red Wine Vinegar
1/2 cup chopped parsley
1/2 cup chopped dill
Salt and Pepper
Boil Potatoes until tender but not mushy and drain. Cook bacon for a few minutes then add the onion and cook until soft and the bacon starts to crisp up. Slice warm potatoes into bacon and onions(leave the bacon grease) and add the rest of the ingredients. Mix well and season to taste. Add more or less vinegar if you like. Serve warm or cold, people will be scraping the bowl.
