In an attempt to change some meals to healthier options, every few months, I spend a few hours on a Sunday afternoon doing the following:


Make a batch of pasta sauce loosely following the linked recipe. LINK. I will add some zucchini or other veggies I have on hand to sneak it into the kids diet.

I will buy 3-5 lbs of ground turkey and make some meatballs with fresh herbs. I will then bake them till almost done. Then will brown them in a skillet of olive oil for a little texture.

Bought some cheap plastic canisters on Amazon that I can freeze/reuse. I will make 6 or so batches of pasta sauce with enough meatballs for the family and put it in the deep freezer.

Then on any given night, cook pasta and heat up sauce/meatballs. Pretty quick and hearty meal.

We do different rice bowls, boom boom shrimp or boom boom salmon. Some type of Mexican style bowl. Easy and usually eat on it for a couple nights.

I do chicken thighs and the little potatoes in cast iron in the oven.

Easy to prep and cook
8 bone in chicken thighs
Olive oil
1 TBsp butter
SPG seasoning

Coat chicken chicken thighs will olive oil and melted butter. Coat with seasoning on both sides

Place in cast iron skillet

Put in preheated oven at 425. Cook for 50 minutes. Turn oven off and leave in for extra 15. Take out and let cool for 15 minutes.

Take 2 bags small red or golden potatoes. Do same as you did with chicken. Dump in cast iron skillet. Cook in a preheated oven at 425 for 50 minutes.


My kids love this meal. Easy roasted chicken thighs and potatoes.

We like our thighs crispy so they may be a little dry for some. You can take out after 59 minutes if you like.

Shrimp with a garlic butter sauce over noodles with a side of sautéed zucchini or yellow squash. Takes about 25-30 minutes to throw that together

Red Beans with ground meat over rice.

Taco soup

2 lbs browned ground beef
1 can pintos, rinsed
1 can chili beans with juice
1 can rotel hot
1 can stewed tomatoes
1 can corn, drained
1 small can green chilis, rinsed
1 envelope taco seasoning
1 envelope ranch dressing mix
1.5 cups water

Simmer for 20 minutes.

There are many derivatives but that’s my favorite.

Wife made that last night. Always good. She adds black olives, pretty much follows the Paula Dean recipe. I think a can of hatch chilies would be good in it.

Im not scared of leftovers.
Cook up a bunch of protein on Sunday
(like a couple family packs of boneless skinless chicken thighs)
use it throughout the week for stuff like :
chicken bacon ranch wraps
green salads
quesadillas
burritos
mexican pizzas
