Quick and easy ways to enhance a dish

Tonight I was making a meal for company and was finishing up my asparagus with some shredded havarti cheese, something quick and easy. The cheese enhances the dish tremendously imo and takes no effort. Do you have similar enhancements to sides or main courses that you cook?

Coconut milk. I get these small 5.6oz cans at Asian grocery stores for under a buck, and can add it to smooth dishes as you would cream or yogurt.

Id say any fresh herb or spice is the way to go. Not the kind in the bottle but I'll do some new potatoes or sautéed veggies and they will be good, but then I'll cut up some fresh rosemary or basil and bam, different ballgame

Fresh herbs are always a winner as is fresh, grated parm. Cooking in red wine is one of my favorites .

Slow cooked or braised meats can sometimes benefit from a little roasted tomato paste, olive paste or anchovie paste. Kind of extra umami. Fresh herbs and some kind of citrus in green vegetables.

Green onions
I put these in and on just about anything they go with. I'm addicted.
Fresh herbs are another as others have said.
A lot of dishes do well with the addition of an acidic component.
I use more lemon zest than juice quite often. I prefer it. It enhances the freshness of fresh seafood.
