It's way off the beaten path in Evangeline Parish. North of Eunice.

Darla, how do you make your cauliflower rice?

I use frozen, riced cauliflower and I cook it in a skillet on medium heat, adding no liquid. I try to cook it until it is as dry as possible. Moisture makes it mushy and less like rice.

I will top it with gravy, if I'm having roast, and it still seems to stay rice like.

If I'm making something like a cauliflower rice bowl, I cook all of the other ingredients (mushrooms, peppers, etc.) and don't mix in with the cooked cauliflower rice until the end.

Wal-Mart has it, but be careful, because they also sell herb and cheese flavored ones that have extra carbs. Whole Foods also has it, but not the same brand, and pricier, of course.

Unfrozen is available at Albertsons and Rouses, but I like the way the frozen turns out better.

Day 3 of 21 on the Paleo Shred Diet down. Lost another 2 lbs so I'm down from 203 yesterday to 201 today.

Another night without beer which sucks but so far so good.

The two Rouses I go to arrange their produce differently and keep them in different places, so you might need to ask.

The one Bertrand has it at the far end of their produce section, closer to where their seafood and butcher counter is. The one on Johnston keeps it in a refrigerated section behind glass doors, where bagged salad and such can be found.

Blah. I hate when certain foods creep in and make you feel shitty. Do you feel like you've lost since you went back to keto?

Yeah haven't weighed myself though.

Eating has been back under control so that's good.

Probably going to try carb cycling starting in june.
