Prime rib is done

Time to steam the green beans, bake the mac, and mash the potatoes. Been a great Christmas. Hope all is well.
Smoked the prime rib at 230 for four hours to 128 degrees. Put it in the oven at 500 for eight minutes. It's a good one.

I went to WalMart this morning they had a few at $6.97#. I asked the meat guy if he was going to be making them down. He said the only mark down meat that's within a day or 2 of expiring. They roast they had expired on the 1/10/17. He told me if I find on that expires on 12/26/16 or 12/27/16 he would mark them 50% off. I couldn't find any though.

600 degrees indirect for the crisp up.
Resting before serving.
My wife likes to call this rare +. Pulled at 127. May have gotten to 130 before serving.

I promise it was medium. It was 130 when I pulled it. I normally eat it rare, but the pregnant wife wanted medium.

225*F for 3 1/2 hours. Seared on a hot grill. Pictures don't do it justice.

I agree, but I'm going to defend him, I have trouble with lighting sometimes when I take pics of cooked meat with my phone and sometimes it's great... A couple weeks ago, I came here looking for advice on steaks in a cast iron skillet. After taking some notes, I tried it again and cut into the steaks and they were perfect. I tried to take pics to report back on having some success, and the pictures didn't turn out great so I just enjoyed the steak and went on about my night.
