Post your favorite ‘smoked’ side dishes. Vegetables if you got ‘em

I need some new sides, particularly healthy veg types, that are good on the smoker. Getting burnt out on the same 2-3 things. Anybody have some simple and healthy tips worth a try? TIA

I really enjoy smoked tomatoes. Haven't done much of it myself, but have had what others have done. You can make soups and sauces with the extras as well.
Love smoked mushrooms.
I like roasted radishes. Taste is much different from the raw. They get sweeter. I would think they would be wonderful smoked.

I have never done it but seems like smoked pineapple would be delicious. Gris- mushrooms sounds amazing also
We do zuchinni, squash, and asparagus on the regular grill all the time but that is more roasting than low and slow on a smoker.

You can eat them alone or use them to make a creamy pasta sauce or soup or a mushroom pate of sorts. I have one of those stovetop smokers and I've done mushrooms on it pretty often, though not lately.
This is herbed pasta I have made a number of times. I've added smoked mushrooms to it which took it up some notches. Adding some sauteed shrimp is also good in it.
• 2 cups heavy cream (whipping)
• 3 t fresh basil or 1 t dried
• 3 t fresh thyme or 1 t dried (crushed)
• 1 t salt
• ¼ t each of red, black, & white pepper
• ½ t fresh garlic
• ¼ cup chopped green onion
• ¼ cup chopped parsley (can use dried)
• 12 ounces angel hair pasta or linguini
Pour cream in a large, heavy skillet over medium-high heat. Bring it to a simmer, stirring often. Add herbs and seasonings and let reduce until nice and thick – it should coat the spoon heavily. Add green onions and parsley and cook a few minutes more. Add well-drained, cooked pasta and gently toss.
When Emeril was at Commander's, there was a smoked mushroom and tasso pasta appetizer there which was delicious. That's where I got the idea of smoking the mushrooms. He also served it at Emeril's when he opened. Here's the recipe from his website.

My wife likes what I called “smoked potatoes”. Cubed Yukon golds toss in oil and SPG. Put on cookie sheet and into smoker at about 275 or so and go out and toss/move them around every 15-20 minutes until they are done and a little crispy. You could add some onion in if you wanted.

Smoked jalapeno dip.

Oil, salt/pepper quartered tomatoes. Smoke for an hour or two. Remove the skin.
Sautée onions, carrots, celery. Add the tomatoes and stock. Blend with emersion blender.
Add cream before serving.

I like to lay down some foil on a rack, curl up the edges, and smoke peanuts. Often, I'll smoke some Maldon sea salt to be used in other dishes I haven't heard fresh peach slices mentioned yet, also an option.
