I know he’ll get mocked for being non traditional but dude made his own stock and had a good color on that gumbo

He acknowledges that it’s not traditional gumbo, therefore I have no issue with it. Cooking should be fun, try new things and cook how you like. As long as you aren’t trying to pass it off as authentic or traditional.

I've watched him before and his recipes/techniques do actually work. Haven't tried this one but he has a good track record- iirc he worked as a line cook or sous chef in a good NYC restaurant

I’ll bet it was more than that.

Take the tomatoes out of that, and it looks damn good.

mysterious ingredients in his seasoning might be good but not cajun. His coments about okra proves he dont know how to cook it. neva ahd beef in a gumbo but he said not traditional which was obvious with the tomato so what the heck serve me up a bowl if I can tollerate the 2 mistery ingredients in his seasoning it aughta be good

shite, my seafood gumbo - oysters, shrimp, crabmeat - runs me close to $250/pot.

Looks good to me. But I'll be damned if I spend that much to make a pot of gumbo. What are king crabs now, $30/pound?

I'm using 30 cents/pound leg quarters.

He was good until he dumped the tomato sauce in there. No longer a gumbo at that point in my book. He did know to use butter for a seafood roux so that is a plus. It looks and probably is delicious.
