I have been thinking about a smaller staub pan for omelettes....but ran across:
Pot Shop of Boston 10 inch Omelette Pan
my research shows that this pan is solid.....any thoughts, recommendations?

You seriously going to pay $165 for an omelette pan ? Go to restaurant supply store and buy a 10 dollar non stick and throw it away in a couple months and go get another. If you use it only and with rubber spatula it should last way longer. Just don't scratch it.

The green ones for 9.99 at dollar store are dam strong for about 20 cooking’s which is about a year for me. So at that price I can go get about 16 years worth

For that kind of money I’d buy an old griswold/wagner/bsr chef skillet. If you do get it, let us know how it cooks.

I just use the same non stick pan I use for other stuff. As long as it has the curved sides, you can plate and fold the omelette perfectly.

I swing by TJ Max every 6 months and grab an 8" Calphalon nonstick. Eggs every which way, every morning for the kids. Throw 1tbs butter down, 3 eggs whipped with salt, pepper, 2tbs sour cream. Top the omelet with chives. Totes muh faves. I'll throw in some chopped meat if there are leftovers in the fridge.

I’ve never tried sour cream, thanks for the tip

I have always sued 9" cheap ole teflon pan when it gets scratched by someone I just throw it away and get another. My trick to great onlets and perfect fried eggs is a good glass lid for it mine came from a stock pot drip a lil water in ya pan cover it and the steam helps cook the eggs blind folded to perfection I pour the omlet eggs in then all the goodies cover it for a few minutes and fold it as I slide it to a plate.

thanks for the feedback.....
...point of clarification....this purchase is like purchasing staub or le creuset for us...something that the kids or grandkids will enjoy one day.
and we display most of our cookware in a glass cabinet in the kitchen....

I hope they eat omelets forever and don’t fight over it. Too much for an omelet pan for me.

My go to skillet is a Zwilling 8” Madura
And the biggest paradigm shift I saw in my omelettes was using this guy:
OXO Omlete Turner
I like the Jacques Pepin videos - LINK there are a bunch online with great techniques. I think I’m about to go make one.

Yall should go to Costco and get a jar of the hatch green chiles. I've had a green chile omelette every weekend for the past two months. So damn good.

I opened your link and realized I have that same pan. I bought a camp years ago, turn key and it had a couple nice cast iron Dutch ovens and that pan among other things. I don’t know that I’ve ever used it.
I’ll sell it to you for half price.

I bought a nice $25 10 inch non stick pan / y’all were right - no need to drop crazy cash
Made a perfect French omelette tonight for dinner that Pepin would be proud of
4 farm fresh eggs
Dash of salt
Some chives
It was perfect
