Not to burst your perfect omelette bubble, farm fresh eggs don't taste any better than store bought in blind taste tests.

I have a $15 walmarks non stick that has worked fine for about 3 years now, looking pretty beat up, maybe time to drop another $15

They came straight from my friend’s farm - no charge
So they tasted pretty damn good!

Plain scrambled eggs from the store or yard eggs from my gal in St Francisville are miles apart and I can certainly tell the difference. Any yard egg from foraging chickens look and taste different.
And a Jacque Pepin Omelette
Classic French
And Gordon Ramsey’s scrambled eggs.

Go to Sam's or Costco or restaurant supply and buy a Teflon aluminum pan of the size you want. Use lots of butter in it when you cook your omlet, never cook on a temperature higher than medium and only use Teflon or silicon spatulas.
Problem solved.

I have this Winco 8" that I got from Restaurant Depot. I've made hundreds of omelttes in it. Its more technique than pan. You'll need a silicon spatula too.

Taste better, creamier texture, more omega3 and vitamins in cage free/farm eggs. Science aint telling me what tastes better

They taste better because you want them to taste better.
Nothing inherently wrong with that, just an FYI.
