If there is any chance to use okra in a dish, I'm going to take it. Love that stuff.

Okra and tomatoes cooked down go in every gumbo I make. I like the additional flavor and texture, and it gets wiped out without complaints.

I smother mine first too and that is one of the only times I use a crockpot for anything.
Fill it halfway with okra, add 1 diced onion and a can of rotel and sprinkle with salt. Fill the rest of the way with okra, add 1 cup of water and 1/3 a cup of vinegar and let it cook on medium for about 4-5 hours. Stir every 45 minutes or so.

I had 2 gallons of cut up okra yesterday morning after I picked what was available and what I had on hand from the previous days picking.
I cook mine on top of the stove in a large pot with onion, garlic, salt and pepper for seasoning, 2 cans of petite diced tomatoes, a bit of Worcestershire sauce and about 2 cups of water.
I'll let it cook for 3-4 hours, then let it cool enough to bag up in quart freezer bags and put it away.
Last week I smothered some and in another pot made a roux, added the trinity and some seasonings with some shrimp and crawfish stock to cook down while the okra cooked. When the okra was done I put it in the pot with the roux and let that cook for a couple hours then added fresh shrimp and some of the peeled crawfish tails from my last boil this past spring.
Absolutely delicious over a little rice and a couple spoonsful of Cajun potato salad to go with it.

If I have okra laying around I throw it in there sometimes. I usually roast my okra in the oven and add after. You skip the slimy stage

Seafood gumbo - yes
Sausage and chicken gumbo - no
I do like okra, cooked dry (no roux) with chicken and tomatoes, (an old creole recipe)
And same dish with sausage added
or just okra, bacon onions and tomato

This is what my mom taught me many years ago.
To each his own though.
I have eaten and enjoyed okra in different gumbos.

Love fried okra but my Dr. would have a cow seeing me eating it with my cholesterol issues---------so I don't let him see me eating it.
I don't fry vegetables often, but will do okra, broccoli, cauliflower, eggplant, squash and pickles just a few times a year.

Okra should be a base for any gumbo, imo. That said, you’re eating it, do what you want.

I love it, but my husband does not, so I don’t put it in my chicken and sausage gumbo. I do put it in my shrimp and okra gumbo, along with Rotel tomatoes *gasp* because it’s delicious, and because I can. It’s all for me though, or I share with my bestie.

It’s not gumbo if there is no okra in it.
Chicken/sausage is a soup without okra.
Just my opinion.
If you don’t like look or texture of okra, (like my kids) put it in a blender with the other vegetables you put into your chicken/sausage gumbo.

My buddy is laid up with Covid. He called my to go pick his okra this morning. I had about 1 1/2 gallons. Just enough to fill the crock pot and make a batch of smothered okra for the freezer.
