Office Potluck

I need a dish for an office potluck this Friday that can be reheated in a microwave or crock pot.

I absolutely butchered my jambalaya last time (hard rice thread) and had to throw it out. I live in TX so I’d prefer to offer some Cajun food. Ideas?

Cajun caviar
Smoke some boudin the night before
Red beans and rice
White beans
Etoufee (chicken, if no crawfish, works fine for my TX coworkers)
Gumbo (too hot right now though)
Creamy cajun pasta or pastalaya

I did crock pot mac and cheese for the last one and it was a big hit. It's really easy. You put the macaroni in raw with milk, shredded cheese and some butter. Takes like 2 or 3 hours.
I just made it at work fresh that day.

Man, I'm glad I no longer work somewhere that does these things. I always dipped out and went and ate on my own, but the pressure to bring something was intense.

How can it be too hot for gumbo, but not for red beans, white beans or etouffee? Are you eating the latter 3 cold?

Gumbo (crock pot and rice cooker)
Shrimp creole
Shrimp and grits
Pastalaya
Corn and crab,shrimp or crawfish bisque

Hot crab dip....you can make it the day before, chill, and reheat in microwave. Transfer to crock pot to keep warm for the party.

If you're feeling lazy, offer pork rinds with pimento cheese spread (a la Company Burger in NOLA).

Potlucks are a major health hazard in the workplace and often add the additional risk of racial or religious defamation and persecution. I am pleased we were able to get these banned in my office a few years ago along with all celebrations or team lunches.

I worked in an office that was 90% black women. We had a potluck and I brought Carmelized Smothered Cabbage with Andouille. Nobody ate it. I was dumbfounded, because it was delicious. My (black) supervisor later told me it was because it was considered "slave food".

I might have run you out of the building for bringing stinky-azz cabbage to reheat at an office potluck. Smothered cabbage, plus reheating, equals swamp gas funk.

I’m the guy who brings the plates, drinks, or chips.

Bunch of food that’s been sitting out in a break room at an unsafe serving temperature for hours is just begging for someone to get sick. I’m not risking a bunch of coworkers and bosses blaming their food poisoning on me.

Had an office manager plan on seafood for the office party, but she was too cheap to have the restaurant do the set up, she just went and got it and set it all out.

8 people out the next day, 3 of whom were at the hospital!
