Lol, for 4 hours? Gimme a break. What a bunch of nancies in this thread. We've had refrigeration for all of 100 years and now we can't eat food hasn't been cooked for 4 hours? Lol.

ETA: For a restaurant to do this daily is a bad idea. For a pot luck a couple times a year? smh.

Let's not have super bowl parties, birthday parties, or any other celebration where all the food is cooked right before eating ever again.

No kidding—a warming tray, chafing dish, or crock pot will keep you from poisoning everyone. It’s not that hard to practice proper food safety if you’ve got a couple of microwaves and chargers. My office has a credenza we call the food altar—we are always noshing away at someone’s party leftovers or snacks. No outbreak of food poisoning to date...but perhaps being on a college campus builds immunity? Lolz.

Layer of tamales
Layer of chili
Layer of jalapenos
Layer of shredded cheese

Bake it till the cheese starts to turn slightly brown

Refrigerate overnight

Heat in microwave the next day and serve with Fritos or Tortilla Chips

When I was in an office atmosphere that did these things, I treated them the same way. I refuse to eat at commercial buffets due to cleanliness concerns, much less a buffet actually prepared by people who may or may not have any sense of cleanliness when cooking, decent ingredients, or any cooking skill whatsoever. Freaking nasty.

I rent office space in a building with several companies and decided to be friendly and join the christmas thing last year. The one woman who is constantly outside smoking brought a tray of roasted vegetables that tasted like I licked an ashtray.

Combine that with the average person probably not being very careful about food sitting at unsafe temperatures, or who cross contaminate, or who have pets walking on their counter.. I’m just not huge on pot lucks besides with my own friends.

When I was an intern many moons ago I remember an old lady who was big time alcoholics with her husband but was cousins of the owners brought this big pot of gumbo. I shite you not I saw yellow legal pad paper floating near the top. Never again.
