Does anyone get the tendon? Always unsure if it would be tough or stringy

Lots of great recommendations here.
To complement what others have said, some of these places have great chicken wings.
Specifically: Tan Dinh, Mint, Mopho

If you want pho, then Pho Bang. If you want anything else, go to Tan Dinh or Ba Chi if you don’t want to go to the Wank.

Pork and beef tendon are similar. The longer they are braised the softer they become. If cooked a long time they go from tender to gelatinous, a texture that some people don't like. They have a mild meaty flavor and pickup a lot of flavor from the cooking broth. Like a lot of food items, popularity has pushed the price up.

If I can’t get tripe in my Pho, you don’t make the cut. Pho Tau Bay stopped offering it when they moved downtown
tripe and tendon. if you dont have that as an option i'll probably move on.
Pho Nola in metairie has been my favorite so far. I have often found Pho in NO and surrounding areas is very heavy handed on certain spices. Pho Nola is one of the better balanced broths ive had in the area.

long cook times make it very soft and jelly like in texture. The flavor is very mild honestly, you buy in for the texture experience.

Nudo's in Metairie, fire wings and good pho.

Yeah, I like the wings and egg rolls, sides that some of the pho places have on the menu. I figured NOLA would have some good spots and it looks like I’m right. Went to Miss Shirley’s Friday and it was great but didn’t make it to pho this time. Will be back soon.

Two best things at a pho restaurant:

Ok I tried pho, and I don't get it. It wasn't bad but it definitely wasn't worth $17. I had the chicken phi at white bowl. I mean give me some Ramen noodles w chopped chicken breast, onions, etc and basically the same NOT worth the cost at all

Actually, it’s gelatinous. Not sure if it’s an anatomically accurate name (tendon).
Anyway, while I love Lily’s for Vietnamese, I like the pho better at Pho Bang… Metairie on vets.

I’m actually not really a fan of chicken pho either. Give it a shot with any of the various beef offerings and come back.

Try it in the East, if you ever find yourself over there. Different family and slightly different product. Seems like each Pho Bang does their own thing.

when i first moved to houston, you could get a huge bowl with tons of meat and noodles for under $10, now a small bowl costs $12 almost everywhere.

I’ll have to look up where that one is…
I’m in LV, so not too far.

The apps I posted on this page are from there as well. The eggrolls are amazing…it’s almost solid meat and you wrap the bitterly fried thing in that lettuce and dip it all in fish sauce. When they come out fresh, and they always do, it’s so texturely amazing..

Like ramen, they’re both street foods that have found popularity in the states which has elevated their status…and prices. With that said if you have ever tried to make pho or ramen broth you don’t mind overpaying for it at a restaurant. But $17 seems like gouging, and there’s no way I’m paying what they want for ramen in NOLA.

this is where you messed up.
Youre also not wrong on the price. been eating Pho for decades, use to be a cheap eat.
still love it and will pay for it though. (not chicken pho though)
