New Griddle Ideas?

I love my griddle, keep one at home and one at the camp.

I need some new ideas. We all do breakfast, hash browns, fried rice, cheesesteaks, etc...

Got any new ideas?

I grill fish and veggies on mine all the time. Halibut, tuna steaks, etc. Also, Have you tried smash burgers yet?

Check out flat top king on YouTube. I don’t even have one and I really enjoy his videos. Good ol baw from E Tennessee. He does some unique stuff.

I would love to learn how to do good fajitas and fried rice on mine. I just can’t get the recipes right. I did burgers yesterday and threw on a strip just to try. Burgers were good, but the strip would have been better served on the primo.

So for the fried rice, the key is to make the rice and then refrigerate it. It's better if its been in the fridge for 24 hours. I like to throw the chopped onions on the griddle first with a little olive oil, let that cook down some, then the garlic (and shallots if you're feeling up to it) for a minute or so. Then throw that cold rice on there and squirt your soy sauce in it, some salt and pepper, and mix everything up. Last step - add one or two eggs in there and mix everything up well. Add a little more soy sauce if needed and then it's ready to go. Add some fresh green onions to the top and maybe a few sesame seeds and you're ready to eat

I know smash burgers have been mentioned but, try Oklahoma Onion Burgers (Google is our friend). A variation from OK during the Depression IIRC. Short version ball of 80/20 thrown down and smashed on screaming griddle. Season exposed side, top with lots of thinly sliced onions, flip, season cooked side top with cheese slice and pickles. Mustard on bun and away you go. They really are very good. Not going to give up charcoal grilled but a great variation with a little bit of history. Do yourself a favor and make as recipe is written ( horrors- processed cheese) because it works here.

Some use chicken but I use italian sausage. Put the protein on the griddle with a chopped onion and garlic. Once cooked throw in some mushrooms. Put a family bag of fresh tortellini or ravioli and olive oil. Your grocery store probably has several different varieties. Let that cook for a minute or 2 then add a bag of fresh spinach to wilt. When its almost wilted add a small container of grape/cherry tomatoes. As you mix it up add some italian dressing and cheese and warm through. I have used parmesan and other pearl mozzarella. It is pretty tasty.

If you've never tried it find some sweet soy. I have used ABC Sweet Soy and it was a game changer.

This is what restaurants use:

A mix of sesame oil, olive oil, rice cooking wine (mirin), and soy sauce(sometimes added separately).

That is mostly how I do them and did not know it was called that. Only thing different is the more thinly cut onions. will give that a shot.

My fav thing lately todo on the flattop is tik tok foldable quesadilla. Done them for breakfast and lunch.

When you flip the burger turning the thin raw onions into that hot beef fat they char and caramelize incredibly..

I’ve never tried it, so I can’t take credit for it, but a guy on another board I read was talking about “jambalaya fried rice” on a griddle over the weekend. I guess you kinda just fry it into a patty like you would with boudin.

Oh yes. Especially if they are translucent thin. George Motz uses a deli slicer to get his onions that thin on his world famous smash burgers.

A lot of folks are doing spin offs of Taco Bell’s crunchwraps.

New idea.....The Boudin Crunch Wrap......boudin patty grilled. Layer pepper jack, patty, grilled onion and jalapeños, jalapeño ranch, another layer of jack cheese.
