I'd leave out the white meat and cook down the veggies more by spending a little more time stirring or adding only the veggies to your roux instead of veggies and meat.

Looks great. I like to cook the onions down in the stock a bunch before I add anything else. Then I like to just add the rest of the trinity.

Then I add browned sausage and chicken stock.

I go ahead and let that simmer for a few hours before adding browned chicken for the last hour. Don't like to leave the chicken in there too long or it will get stringy.

some good input in here thus far. good call by Dean and co. to recommend browning the meat more. I worried that if I cooked it too much it would overcook as it simmered and come out dry. I see the point of why you want to brown it more to release more flavor into the pot and to impart more flavor into the meat.

will also diced smaller next time and saute longer, even though these weren't near as crunchy as last time, it would be better if they cooked down into the gumbo more. and interesting suggestion cooking down the onions IN the roux or the stock. that never even crossed my mind.

my mom and pops had rice with their's. i passed on it this time.

The sausage looks like 'Down Home' stuff from the grocery. Try to find some good Adouille at a local market like Maxwells. It makes a difference.

I've got to go to Shreveport Friday for a testimonial dinner. Will use the trip to buy some andouille at Maxwell's on Line Ave and cook Lucy some gumbo on Sat.

I was in Alabama at my folks house. Only thing I could find was Savoie's andouille.

in a perfect world you shouldn't even be able to see or feel them (trinity) when you're eating the gumbo

This is important. This allows you to brown the chicken harder.

gotcha. I'm gonna cook them down in the stock sans meat next time then add the browned meat later on, as l'affice said.
