absolutely .. the lard gave it a really rich flavor. i'll never make it with straight vegetable oil again. maybe 1/2 oil + 1/2 butter, but I think you definitely need some good amount of fat in there.

I don't even know where to buy lard.


I did follow Mr. B's gumbo recipe once and they only use butter. Was good but I felt like it took forever to get that color. I'm sure that gets better with practice.

How much does making your roux with lard rather than vegetable oil change the flavor?

I stirred and stirred and stirred until my arm was about to fall off. took about 20 minutes of consistent whisking.

for me it gave it a fattier flavor and didn't have any of the slightly burned flavor I found with the vegetable oil roux.
