Exactly. She’s cooking from a hyper local folk tradition.....I personally have nearly identical recipes for more than a few of her dishes. I can pull four or five community cookbooks and other local pubs off my bookshelf that contain very, very similar recipes......the old Lagniappe on the Bayou festival cookbook, Wylma’s La Trouvaille cookbook from the restaurant she mentions in her cookbook, or any of the many recipe collections published by the Houma Courier newspaper.
She’s not claiming to be a blazing original....she’s trying to be an exponent of a regional LA cooking style that isn’t often seen in NO restaurants.
I’m sorry I posted, who knew a simple restaurant query would bring out the trolls. We are in a terribly difficult time to operate any sort of hospitality business. I wish her nothing but good luck, and if you want to cook some bayou cajun food at home, check out her cookbook.

I’d rather hear it from her, and recipes aren’t copyrighted anyway
Plus - I have no stake in the matter - just know some people from down where she’s from
Everyone enjoyed the Lagniappe Fair back in the day, most people miss it too

I just know that some people aren’t necessarily happy with how she’s brought forth some of the community recipes - that’s all
Plus, I’ve read her cookbook - I think it’s written for people who don’t know about Cajun culture - so it’s good in that sense - although I don’t know how interesting it’ll be to others
Most of my family works in the hospitality industry, and trust me, we know how tough it is right now - which is why it’s a good time to be civil and NOT try to scare customers away. It’s not that I don’t want her to be successful because I never said that, nor wished it. I personally don’t have any problem with her stuff.

And yet.. every time a Cajun recipe is bastardized on a national platform, the pitchforks come out.
Now we have someone sharing authenticity and who was very respectful in her book when sharing it, and we are salty about it.
Can’t please the gatekeepers no matter what you do.

I’m not going to antagonize her about where he recipes come from. Every chef is inspired by something.
People that live down there live in a bubble & very likely do not understand the competitive market she is trying to make it in. She has to adjust to her clientele & let’s face it, she’s not feeding toothless, pajama-pant-wearing point au chene residents

That’s what hard to understand
The same people that complain 24hrs a day about the government ruining the bar & dining scene are the same ones to call a restaurant owner “unhinged” when someone fricks with their livelihood. They throw right & wrong right out the window pretty damn quickly lmao

Nope, you’re right about that - those people from Point Au Chene wouldn’t go to her restaurant no matter where it was, they’d all say they cook better and no way in hell would they drive to New Orleans and pay those prices

Was checking out their website and saw this thread.
Not sure if things were the same last year, but damn if they don’t come across as super pretentious.
One of my faves is how they say it’s extremely hard for them to answer emails and may take a week or longer to get a response. Then later on they say it’s really tough to answer the phone, so please send an email. And heaven forbid you ask them anything in their social media accounts.
