I was making jambalaya Gonzalez style the other day and I had trouble getting the meat to stick to the bottom of the pot. I left the chicken there for what I thought was the right amount of time to stick but it never did. Whatever I tried I could not create gratin. I was using an enameled cast iron over medium heat.

Is this a pot issue? Or did I not have a high enough heat?

It is not even that my musical taste has changed. I cannot stand the music I used to listen to in high school and early college. I used to like Red Hot Chili Peppers, Sublime, 311, etc. Now, I change the station immediately if it comes on. I do not know why but something clicked on day and I no longer like them.

Live music is much better than studio. I like how unpredictable it is.

That is why I prefer jam bands. I like how they improvise and you will hardly hear a song played the same way twice.

It gets repetitive listening to the same recording of a song over and over again. Live music brings something new to it.

New Crawfish Pot and Burner

I am looking at getting a New Crawfish Pot and Burner for Christmas. Are Bayou Classics worth it? They seem to be priced higher than the rest. Any body have a Loco pot? They look interesting too. I also found this on a restaurant supply store. I usually like getting things from restaurant supply store because I find they are usually a good price and durable. Thanks for your help.

I had the exact same issue. They were out of several bottles of wines and the waitress kept suggesting bottles double the price. I would not have had a problem with a more expensive suggestion but to go double the price was a bit ridiculous.

These suggestions are pretty spot on. These are all highlands suggestions. Usually don’t venture over to Cashiers.

I’ll add Highlands Smokehouse for BBQ.

I did not really care for Wild Thyme. I thought it was overpriced.

Blue Bike Cafe in highlands has great breakfast and lunch.

If you can get in at Madison’s in Old Edwards, do it. It’s one of best dining experiences I’ve had.

Pete Carroll and Steve Spurrier left for the NFL it wasn't like he left for another college program.

Urban Meyer "retired" from Florida and Ohio State. Once again did not just jump ship for another program.

Getting fired has nothing to do with a head coaching job being a destination job or not.

There are two types of destination jobs. Those that are the final destination to the coach and those that the program is in such a place that no coach would want to leave, with exception to the NFL.

Both Nebraska and Michigan were destination jobs for Frost and Harbaugh. Alabama, Ohio State, USC etc are all jobs that once a coach gets there, they are not leaving.

Ole Miss does not strike me as Lane's destination. He will move on to bigger and better. Maybe the NFL or maybe a bigger school.
