I’ll try and justify it. I’m on EST and it was about 10 am my time. And it’s hard to smoke without having an ice cold crispy boy. Lol!

Leg quarters and wings on the smoker. Got a late start and just fired up the smoker, but chicken doesn’t take long so I’m good.

ribs on the smoker, 4 hours in, about to get pulled, baked mac n cheese, crown and water

Wine braised smoked beef short ribs (3 hrs. smoked then 3 hrs. braised in wine and stock). Sauce defatted, reduced then fortified with tomato paste, dijon mustard and spices. Thicken with sherry & corn starch.
Served over cheesy polenta.
