Big beach vacation and making 2 or 3 casserole sized lasagnas a few days ahead to freeze.

1) make it *And* bake it fully then freeze?

2) make it (including the browning of meat) but *not* baking it until at beach?

Just curious if there’s anything meaningful to think about that would make it better in the end or not.

Make, freeze, bake. It'll come out great.

I recommend this recipe:

World's Best Lasagna

Make it and freeze it without baking. It will take about an hour or more to bake. Take the foil off about 15 minutes before the end to brown the cheese on top.

Definitely go this route.

Cool. Sounds like option 2 is the way to go. Thanks!

One of my favorite things. So easy to do and feeds a lot of people. And it tastes great.

What this man said. I've done this many times and it does come out just like you made it fresh.

When you buy frozen lasagna entrees in stores, it is frozen before baking and up to you to defrost it and toss it in the oven.

This.

Put the entire casserole together and freeze without baking. Defrosting it can take some time, so make sure you allow for that. Sometimes, I don't put the cheese on top before freezing. I add it during the cooking time.

Save your ice chest space and stop at grocery closest to your destination and buy the frozen Stouffers Lasagna.

I love homemade lasagna but Stouffers can make a very good one as well and saves you hauling pyrex.

Sorry, but Stouffers isn't remotely close to homemade.
To avoid hauling pyrex, just make & freeze in a disposable foil pan. No cleanup...sturdy disposable foil is ideal for make-ahead vacay food schlepping.

I knew the jimmies would rustle.

My days of cooking on vacation are done. I’m all about convenience. My actual suggestion was going to be if OP was going to Florida I’d say get Publix fried chicken but I decided to stay on topic.

The party size is about twelve bucks and has twice the meat. That would feed an entire beach house including cousin Eddie who lives under the sink.

Homemade lasagna is definitely better, but Stouffers lasagna is one of the only frozen food items that actually taste great imo.

Well they are all out buying their 00 flour to roll out their own lasagna noodles to worry with such a suggestion.

I like lasagna and I’ve made it quite a lot but i can’t say I’m a lasagna aficionado so I can’t really tell you if I’ve had a great one or a really bad one. It’s meat and noodles. It’s bulk food to feed the masses on vacation or sports teams fuel feeds. That 8 year old doesn’t give a crap about the lasagna as long as he has a pail and shovel.

Now the wine to be served with it. That’s where I would have an opinion.

Yeah it’s easier, cheaper, and once you drink some wine, you’re satisfied.

You know how some food snobs are on the OT. Saying something is disgusting when that isnt a relative term to what we are talking about. Boiled brussell sprouts with no seasoning is disgusting. A stouffers lasagna isnt a 5 star meal, but to say it’s disgusting is asinine.

Edit: For the OP, making and baking and then freezing will cause the lasagna to be mushy and gross the next time you reheat it. I learned it the hard way with leftover lasagna one time. It was amazing when first made, but after freezing and reheating, it went into the trash after 1 bite.

See, I find it to be really fun. If the group isn't wanting to go out to dinner that night, what the hell else am I going to do when I'm done with daytime stuff and back in the condo/cabin/etc? Sit on the balcony for 6 hours until I pass out?

Cooking in the cool A/C with my beach towel wrapped around my waist and a nice glass of wine and the music playing.. man, that is the best to me.

I much prefer cooking fun dishes on vacation over going out to overpriced, usually mediocre restaurants.

I just got back from a trip to New York and my very Italian friends there won't let me stay in a hotel. I have to stay at their house. They invite a bunch of friends over and we went to Union Square Farmer's Market and Arthur Avenue in the Bronx for fresh Italian sausage, and pasta. If I would've said Stouffer's, I'd be kicked to the curb.
