I made some lasagna one time and didn't realize I was out of the flat lasagna noodles. I was too lazy to make a quick trip to the store. I wanted to get the lasagna in the oven in time for dinner. So I substituted thinly sliced zucchini squash for the lasagna noodles. It resulted in a surprisingly good pan of lasagna...received many compliments. Next time I'll experiment with using thinly sliced yellow crook neck squash.

I did that recently with eggplant (pre-baked the eggplant so it was more crisp) and it was great. You really don’t miss the pasta in dishes like that, I find.

There's a restaurant called Roberto's on Arthur Avenue in the Bronx (Arthur Avenue is considered the real Little Italy by New Yorkers) and they have a dish called Parmigiana di Melanzane e Zucchine which is exactly that..eggplant and zucchini lasagna without the pasta.. and it's delicious.

Big James, You might want to salt and drain the yellow crooked neck squash as they give off a lot of water in casseroles (There's a recipe in the NYTimes cookbook from the 80s that is yellow squash based, and most tender yellow squash just become mush. Only the oldest ones have held their shapes through cooking in the oven.)
