Loquat is bearing tons of fruit - recipes?
Bought our house about 6 years ago, and it already had planted a nice, evergreen tree. Bore fruit one year, but we couldn't id it, so we didn't risk eating. Now, we had the LSU Ag Dept id that its a loquat tree, and the fruit is, indeed, edible. Anyone have a recipe for what the hell to do with the tons of fruit its about to bear?

Lucky you. My poor loquat is about to die. I used to sit under that thing and eat until I got the fois.

Make jelly

Also know as Japanese Plum and by the local term "Mispolice" as in Miss Police.

I had a nice tree in my yard but Katrina took it with the flood waters staying for weeks on end and never planted another one since I made my vegetable garden bigger.

Like fig trees, they were pretty much a staple for many homeowners back in the day. One of my neighbors, when I was a kid, had a huge lot and had persimmons, figs, loquats and cooking pears growing in his yard.

Makes good jelly but it takes a lot of them to do so since most of the inside is nothing but that big brown seed.

Just a little heads up. If you get that juice on a white t-shirt, it will stain it brown after the wash. I ruined a t-shirt eating those things. Luckily, it was a trashy Fred's t-shirt.

Thanks, all! FYI: Found two recipes, besides jelly. One for a chicken breast topping, other for a dessert crumble. Here are the links (and, yeah, the inside is mostly damn seeds!):

Couple of the fruits had already ripened. Put them in some vodka. Nice damn drink.

Now, why didn't I think of that? That sounds awesome.

Pick da fruit nip the blossom end off split and remove the seed part. Then ya can do with them what ya want we can them in a light syrup or freeze them they are good fruit so ya can pie or cobble or anything ya want. We make muffins outs stuff in our yard often the plums. figs, citrus, pecans etc. on a side note they make very good wine

Make and put up loquat jam, jelly, preserves, chutney, and loquat butter (like apple butter) with what you can't eat fresh. I bet you could make something similar to fig preserves with them.

For cooking with it, I'd think sweet and savory chicken and pork dishes with loquat substituted in for your typical fruit ingredient would work. Maybe make a Cobb salad but with loquat instead of apple. Loquat pie. It probably would be good replacing mango in a mango salsa. They'd probably make a damned good cobbler. Maybe they'd be good pickled?

Well at least you didn't stain one of your Sports Illustrated shirts.

I must have 20 of those beauties still in the closet at my parents' home.
