IMO, the drop-off from the meat markets to mass-marketed is very steep. Really, it's like two different species and the two should not be confused.

Manda is not as bad as many make it out to be. Same class as Double-D, Conecuh, Country Pleasin, Big Mikes. They are what they are.

That's why I on multiple occasions recommend New Orleans Smoked Sausage. For mass-marketed sausage, it's way ahead of the aforementioned.

When I stumbled across I started a thread about it. There were four NO area chefs that did it for Hogs for the Cause charity (not familiar with the charity but the sausage is legit.

Conecuh is 1000x better than Manda. There's better small batch stuff out there that's hard to find. But you'll never find a better made produced sausage than Conecuh. It's good enough to eat by itself.

In Ascension Parish to me D&J’s grocery has the best sausage and andouille.
