Looking for ideas to use a pound of Mexican chorizo

Picked up some really good chorizo yesterday and looking to do something. I’ve made the typical tacos,, quesadillas chorizo and eggs etc. kind of leaning towards some kind of soup. Maybe a vegetable chorizo soup with hominy.

Soup could get a bit oily may want to cook and drain first.

You could always do a queso flameado and tear it up with some good flour tortillas for maximum weight gain potential.

I saw a video on youtube a year or so ago where someone made lasagna using chorizo. Looked really good!

Omelets
Put it in white beans in place of ham or tasso

I’ve roasted chicken with it stuffed under the skins before. Came out pretty good. Picked it all over the bone and made tacos.

Brown it with some black beans, onions, jalapeno peppers, and lime juice. Pickled onions and peppers, preferably. Use a splash of tequila to deglaze.

On lettuce wrap or tortillas. With queso fresco and cilantro.

Sounds like you want to make Pozole...

Or try a pork, chorizo, & hominy stew.

Not sure what you are asking here....... I picked up some really good chorizo. I eat chorizo tacos at taquerias fairly often. Yesterday’ I had some that were really good (really good chorizo) I asked the guy at the meat counter if it was what’s used in the restaurant end. He said yes so I bought the aforementioned “really good chorizo.”

Where did you pick it up from? What makes it really good? Is it a brand, homemade, store made, etc.

Just cooked up 24oz tonight to possibly place in a crock pot cornbread stuffing recipe I came across.

Worst case I'll have vacuum packed cooked Chorizo in the freeze.
