Looking for a legit dirty rice recipe.

My grandmother passed away sort of unexpectedly this year and literally took her recipe to the grave. This was one of those dishes that she just used her kitchen voodoo to make. I wanted to take a shot at it this year because it wouldn’t be right not to have dirty rice at thanksgiving.

Damn I only had unlegit ones. Add an extra onion and bellpepper to what the recipe says. That’s my cajun advice.

My late father-in-law made a killer pot of dirty rice and we looked forward to it every Thanksgiving.

He'd use chicken gizzards and livers as his meat base and that stuff came out so good. I looked at the video someone posted with the guy using just ground meat, and that is not my take on dirty rice, but to each their own I guess.

I feel you. Maw Maw made the best rice dressing on earth. I tried to cook some for a Christmas party last year, using the Acadiana Table recipe and it was horrible. So whatever you do, don’t make that one.

I watched that dude when I first started cooking. He knows enough to give decent results and does good recipes for quick after work stuff. One time he boiled crawfish and about half way thru realized he forgot to but the basket in the pot.

That's how they made it at Mamas Fried Chicken in Eunice back in the day. We would always get some before we went to the Peacock.

What’s legit Dirty rice? Is that with or without livers & gizards? My intro to dirty rice was Popeyes in the early 70’s. I am looking to start trying my hand at making it.

I'd definitely go with Link's recipe. Dirty Rice is king around Lake Charles.

I looked up some recipes and a lot call for ground sirloin and/or pork sausage or breakfast sausage. No thank. I’m leaning towards the Link recipe. I’ll post some pics either way.

I make it every year based on my mom’s and grandmother’s recipe - Bayou Lafourche.

- Brown ground meat - a mix of ground beef and pork
- Add diced trinity and cook down. Add minced garlic and cook down.
- Add minced, diced or puréed chicken innards mostly livers and gizzards. This is kind of the magic intense flavor without having chunks
- Add broth and add rice - I’ve also seen them make the rice separately and add
- Season with salt, multiple peppers, thyme and/or Cajun seasoning
- Add minced parsley and green onions in last few minutes
- Option to add oysters and oyster brine a few minutes before the parsley and green onion

Some people like meat heavy versus rice heavy

That's pretty much how I make it, also from LaTerre here.

Typically brown down 2 lbs of ground meat and 2 lbs of pork, remove from pot saving a little grease. Brown 2 medium onions diced fine, a bell pepper and 3 sticks of celery when all of that is cooked down good add a small container of chicken livers, gizzards and hearts (diced).
When all of that is cooked down add your ground pork and beef back and cook for 30-45 minutes. Right at the end add a bunch of green onions cut about 1/4" long.

Some people cook the rice in the meat, no one in our family does. I cook my rice then add the meat mixture to it. That amount of meat mixture is probably good for about 4 cups of raw rice. I split it up and save some in the freezer for quick mid week meals.

I do this same thing, I just add cubed eggplant after the trinity browns and let it simmer in 2 cups of chicken stock for half an hour before I put the cooked rice in.
