Lesser Known Bottled Hot Sauces from Acadiana

We've got a cupboard full of hot sauces from New Orleans and Acadiana but surely there's a few that we've missed.

What are y'all's favorite Cajun hot sauces that may be escaping our attention?

Not Acadiana, but Panola is pretty darn good. It's not available outside of Louisiana, so I'm guessing it would be classified as lesser-known.

This is weird to say but Tobasco is the most criminally underrated hot sauce in the world. There’s really no comparison. No hot sauce in the world is as complex and full of character as tobasco sauce because no one else ages their sauce oak barrels for three years(!).

Do a blind taste test if you don’t believe me. Don’t let its mass appeal fool you into thinking it’s mediocre. To the contrary, Tobasco sauce is incredible.

Is Tabasco not unbearably salty? I love their program and they've been around forever but the salinity of their sauce throws me off.

Louisiana Gold Green Sauce is my favorite. Formerly made by Bruce Foods, but pretty sure it's been bought out. Still made in Cade, I think.

Regular Tabasco has lower sodium than many other hot sauces. A teaspoon has 35mg, a lot of the others I've seen have 120-200. It does seem more vinegary though, maybe that's what you're thinking of?

Someone gave me a container of salt that spent a few years on top of a Tabasco aging barrel. It is permeated with sauce. Makes a neat seasoning.

If y'all are ever up around Mamou drop into T-Boys and pick up some of his hot sauces. They're really good, and he also has a line of powdered seasonings that are dynamite.
